Fructose


Fructose is a simple sugar found in abundance in fruits, some vegetables and honey. It is sweeter than regular table sugar. It is processed more slowly than glucose by the liver and plays the role of a sponge with insulin. In addition, it poses the same problems in diabetes and obesity. It is one component of sucrose and sorbitol.

In fact, we often believe that fructose is better because it comes from a natural source. In truth, fructose sold in grocery stores does not come from fruits. It is obtained by the refining of corn syrup.

This is why it is important not only to rely on the glycemic index, but also to take into account the level of food fructose. A proposed ratio would be 15-20g fructose per day.
